Korean Kimchi Recipe (Homemade)

The Ingredients You Need

  • 2 heads of shredded Napa cabbage
  • 3 cloves of crushed garlic
  • 2 minced jalapeños
  • 5 scallions of thinly chopped spring onions
  • 1 teaspoon of fresh ginger
  • 2 tablespoons of crushed chili pepper
  • 2 tablespoons of raw honey
  • ½ a teaspoon of sea salt
  • ½ an onion

Directions

  • Take a glass or Mason jar.
  • Combine all the ingredients, except sea salt and honey.
  • Take 2 cups from the mixture you made and put them in a blender. In order to make a thick juicy substance, add enough water. Add in the honey and sea salt.
  • Blend it all. Fill your jar with it and press down on it with your hand in the shape of a fist.
  • Pour the rest of the batch in it, but make sure that at least 2 inches at the top of the jar remain non-filled.
  • Place a few rolled up cabbage leaves in the remaining 2 inches. Shut the jar tightly.

The Process of Fermentation

Store it forthree to seven days, at a room temperature of 70 degrees Fahrenheit.

Once you’ve opened the lid you should leave it in the refrigerator. That way you can slow down the fermentation.
